Carrot and Beans Sabzi/Koutu/Side Dish
Thanks to my mother,I grew up in a household where I fell in love with veggies.She was a fabulous cook,today theres no vegetable that I don’t eat,even though I m a hardcore non vegetarian.
This is something that I want to inspire in my children.
My mother’s recipes to me always made the vegetable the star.Simple yet delicious.
Carrot and beans truly compliment each other.And its a win win situation that I can get 2 veggies down together.
Ingredients:
1 handful of onions
1 cups diced carrots
1 cup chopped beans
1/4 tsp Mustard seeds
1/4 tsp urad dhal
1/4 tsp cumin seeds
1-2 tbsp coarsely grinded coconut
1 green chili(Add more to make it spicy)
2 tbsp oil
Procedure:
1.Heat oil in a vessel
2.Let the mustard seeds splutter,add the urad daal and brown them.Tempering is optional.
3.Add onions,green chili and cumin seeds and sauté until the onions turn transparent.
4.Add the carrots and beans and stir fry for 5 minutes.
5.Add 1/4 cup of water ,cover and cook for 10-15 minutes or until the vegetables are cooked.
6. Switch off the flame and add the grinded coconut
I cook Broccoli and Beans Sabzi/Koutu/Side Dish and Shredded Cabbage Sabzi/Koutu/Side Dish using the same recipe.
