Creamy Spinach Mushroom Sabzi
This is a creamy dish which can be had with rice,bread,tortillas or rotis.
I like to have it with 2 slices of bread on days when I want to diet.
Ingredients:
For Puree:
3 cups spinach
1/2 green chilli
1/2 inch ginger
2-3 cloves of garlic
Others:
8 oz mushrooms chopped
1 tomato chopped
1/2 onion chopped
2 tbsp oil
1/4 tsp cumin seeds
1/4 tsp mustard seeds
1/4 tsp urad dhal
5 curry leaves
2 garlic cloves finely chopped
salt to taste
3 tbsp red bell pepper chopped
1/4 tsp turmeric powder
1/4 tsp chilli powder
1/4 tsp garam masala powder
1/8 cup heavy cream
2 tbsp sour cream
Preparation:
1.Blanch the spinach in hot water for 5-10 mins.Save 1/2 cup of this water.
2.Drain and blend Spinach and Puree ingredients in a blender.
3.Heat oil, add the mustard seeds and let them splutter.
4.Next golden fry urad dhal.
5.Add the curry leaves and cumin seeds and cook for 30secs.
6.Add the onions and salt and golden fry them.
7.Add the garlic and cook for 2 mins or until the raw smell disappears.
8.Add turmeric powder and fry for 30sec.
9.Add the chopped tomatoes and red bell pepper and cook for for 5-7 mins.
10.Add chilli powder and garam masala and cook for 3 minutes.
11.Add the mushrooms,cover and cook for 15 mins.
12.Add the Pureed Spinach mixture and cook in low flame for 15 mins or until the raw garlic smell disappears from the puree.I did not add any water at all,as mushrooms themselves ooze out lots of water.If you feel your mixture is very dry add 1/8 cup of the saved liquid.
13.Add the heavy cream and sour cream and cook for another 5 minutes.
14.Switch off the flame and remove the vessel.
