Kathirikai kochu – Brinjal Side Dish

This dish always reminds me of my grandma,A very favorite of my grand dad.An easy to make dish for a busy day meal.

1/4 tsp mustard seeds
1/4 tsp urad dhal
4-5 curry leaves
1/4 tsp cumin seeds
pinch of hing
5-6 small onions quartered
2 medium tomatoes quartered
8 small brinjals/eggplants quartered
1 lime sized tamarind dissolved in water
1 tsp coriander powder
1/4 tsp cumin powder
1/2 to 1 tsp chilli powder

1.Heat oil in a pan,allow mustard seeds and cumin seeds to splutter
2.Brown the urad dhal and allow curry leaves to splutter.
3.Sauté onions and brinjals with salt and pinch of hing,cook until onions turn transparent.
4.Add the tomatoes ,cook until they become goey.
5.Add tamarind water,coriander powder,cumin power,chili powder and cook until the brinjals are well cooked.
