Turkey Gravy
I loved this simple yet delicious Gravy.This recipe is a courtesy of my other mom Kathy.
You can make the broth ahead of time.
Turkey Broth Ingredients:(Makes 2 1/2 cups)
1 tablespoon vegetable oil
Reserved turkey neck and giblets
1 large carrot, coarsely chopped
1 onion, coarsely chopped
1 large celery stalk, coarsely chopped
1 small bay leaf
3 cups chicken broth

Turkey Gravy Ingredients:
2 cups turkey broth
3 leaves Sage
2 tablespoons unsalted butter
2 tablespoons flour
Salt and freshly ground black pepper
Chopped up pieces of Turkey Broth(veggies and giblets)

How To Make the Broth:
1>Heat oil in a saucepan.
2>Brown the neck,heart and gizzard for a minute
3>Add the vegetables and bay leaf and sauté for 3-4 mins
4>Pour the stock and water and bring to boil
5>Simmer for an hour until the Broth reduces to 2 1/2 cups.
6>Add the liver during the last 15 minutes of cooking
7>Strain the liquid from the vegetables and giblets.Set aside
How To Make the Gravy:
1>Melt the butter in a pan
2>Stir in the flour gradually and cook, stirring constantly, to make a light roux.
3>Add in the broth gradually,stirring constantly until fully incorporated .
4>Add the chopped up pieces of turkey broth and the Sage leaves and bring to boil.
5>Simmer until you get the desired gravy consistency.Add Salt and Pepper to taste.
