Spicy Creamy Mushroom Sabzi/Koutu

This tasty spicy mushroom dish will make you fall in love with mushrooms.It can be had as a side dish with rice/fried rice/chappatis/naan.

1/4 tsp mustard seeds
1/4 tsp urad dhal
10 curry leaves
1 tbsp oil
1 handfull diced onions
1 tomato diced
1/2 lb Mushroms miced
2 handful of spinach(optional)
1/2  green bell pepper diced
1 tbsp ginger garlic paste
1/8 tsp turmeric powder
2 tsp coriander powder
1/4 tsp cumin
1 tsp chilli powder (add as needed, 1tsp makes very spicy dish)
1 tbsp cashew paste(7 cashews grind-ed with 2 tbsp of milk)
1/8 cup of Heavy cream

Optional Tempering:(If you do not wish to temper skip 2,3)
1.In a skillet heat the oil
2.Add the mustard seeds and wait for them to splutter.
3.Add urad dhal and golden brown them,add curry leaves and saute for 30 secs.
4.Saute onions until transparent 3-5 mins 3-5 mins,saute bell peppers until tender,saute ginger garlic paste for 3 minute or until it no longer smells raw.
5.Add the tomatoes and cook until the skin peels of from the flesh.
6.Add the mushrooms without water.
7.Add turmeric powder,coriander powder,cumin powder and chili powder.
8.Add salt to taste.
9.Add spinach and cook uncovered for 2 minutes.
10.Cover and cook the dish between low and medium flame for 5 minutes.
11.Add cashew paste ,cover and cook until mushrooms are well cooked.
12.Add heavy cream and cook for a mintue. And switch of the flame
