Dhal Pumpkin Sabzi/Koutu/Side Dish
For past few years I have never cooked Pumpkin,I guess its the fear of the unknown that keeps us from stepping out to try something new.Recently my friend Malar posted a recipe on pumpkins (Click Here to see her version),her post inspired me to call up my mom and get her preparation.
My husband is a big fan of Chayote which I cook using this same recipe
I cook Pumpkin,Squash and Chayote using the same recipe.
Ingredients:
1/2 small Pumpkin cubed/1- large Chayote /2 cups cubed squash.
1-2 Chili (adjust according to taste)
1 handful of Channa Dhal.
1/2 onion diced.
1 tomato diced
1/2 tsp cumin seeds
2 tsp oil
2 tsp lemon(add only for squash/pumpkin)
Tempering:(optional)
1/2 tsp mustard seeds
1/2 tsp Urad Dhal
3-5 curry leaves.
Procedure:
1.Cook Channa dhal and Pumpkin for 10-12 minutes,I do it in a pressure cooker,saves me time.Once the steam comes,put on the weight and cook for 10-12 minutes.
2.In a vessel heat oil,add mustard seeds and allow them to splutter.
3.Add urad dhal and brown them.
4.Next add Curry leaves, chillies and cumin seeds and cook for a minute
5. Sauté onions until transparent.
6. Sauté tomatoes until tender.
7.Add the dhal and Pumpkin mixture and thoroughly cook for 10- 15 minutes,until Channa Dhal is cooked.
